It is 8:00 PM, you just walked through the front door after an exhausting day, and your refrigerator looks completely bare. Before you open a food delivery app and spend thirty dollars on soggy takeout, open your pantry.

If you have two cans of white cannellini beans and a can of crushed tomatoes, you have a restaurant-worthy Mediterranean skillet. In fact, this is one of my favorite dinners when I want immense comfort with practically zero effort.

This 12-Minute Mediterranean Tomato & White Bean Skillet costs less than four dollars for the entire pan. It tastes like something you would order at a seaside taverna on a Greek island, especially when you drag a thick slice of warm crusty bread straight through the bubbling sauce.

Why This Recipe Works in 12 Minutes

Canned beans are already cooked to tender perfection. You do not need hours of soaking or simmering on the stove. What they need is heat, fat, and acidity to absorb flavor rapidly.

By blooming smashed garlic in extra virgin olive oil for 60 seconds, we create an aromatic base that infuses the entire sauce. We then dump in the crushed tomatoes and beans together. As the tomato sauce bubbles vigorously, the starch from the beans naturally thickens the sauce into a rich, velvety consistency without any heavy cream.

Ingredients You Need

Everything comes straight from your pantry and spice rack:

  • 2 Cans (15 oz each) Cannellini Beans: Rinsed and thoroughly drained. Great Northern beans or butter beans work equally well.
  • 1 Can (14 oz) Crushed San Marzano Tomatoes: Quality matters here. Sweet, thick canned tomatoes give the richest sauce.
  • 4 Cloves Fresh Garlic: Smashed and thinly sliced. Do not be shy with garlic in this dish.
  • 3 tablespoons Extra Virgin Olive Oil: Divided. Two tablespoons for the pan and one tablespoon to drizzle over the top right before serving.
  • 1 teaspoon Dried Greek Oregano: Rubbed between your palms into the skillet to release its aromatic oils.
  • Pinch of Red Pepper Flakes: Just enough for a subtle background warmth.
  • To Finish (Optional): Crumbled salty feta cheese, fresh basil leaves, and lots of warm crusty sourdough bread for dipping.

Step-by-Step Cooking Instructions

1. Bloom the Garlic

Set a medium skillet (cast iron or heavy stainless steel) over medium heat. Pour in 2 tablespoons of extra virgin olive oil. Add the sliced garlic and red pepper flakes. Let them sizzle gently for 60 to 90 seconds until fragrant and pale golden. Do not let the garlic brown, or it will turn bitter.

2. Simmer the Sauce & Beans

Pour in the crushed tomatoes, followed immediately by the drained cannellini beans and dried oregano. Stir well to combine. Season with half a teaspoon of kosher salt and a few cracks of black pepper.

3. Reduce and Thicken (8 Minutes)

Bring the skillet to a lively simmer. Lower the heat to medium-low and let it cook uncovered for 7 to 8 minutes, stirring occasionally. Take the back of your wooden spoon and lightly mash a few of the beans against the side of the pan. This releases starch and turns the tomato sauce into pure velvet.

4. Finish and Serve Hot

Turn off the heat. Drizzle the remaining tablespoon of extra virgin olive oil over the pan. Scatter crumbled feta cheese and torn fresh basil leaves across the top. Bring the skillet straight to the dining table and serve immediately with warm crusty bread.

Safi’s Test Kitchen Tips for Success

  • Drain the bean liquid: Rinse the canned beans in a colander under cold water before adding them. This eliminates excess canning sodium and ensures the pure flavor of your tomatoes and olive oil shines through.
  • Keep the bread ready: The sauce is so savory and rich that eating this without bread is a missed opportunity. Warm sourdough, garlic pita, or crusty baguette all work brilliantly.
  • Vegan variation: Skip the feta cheese and top with kalamata olives and toasted pine nuts instead.
