Directions
- Put carrots, water, and Vegetable stock cube in a medium saucepan.
- Heat this mixture on high heat for 2 minutes, When it starts boiling, reduce the heat and let it simmer on low heat for 20 minutes, until the carrots are almost tender.
- Blend this mixture in a blender for 3 minutes, at 1-minute intervals, until the mixture thickens.
- If needed, reheat it again.
- Here’s your carrot chutney, ready!
Notes
- Serve carrot chutney with naan, paratha, or rice.
- Store in an airtight container in the fridge for up to 3-4 days.
