Ingredients

  • Carrots medium-sized 3

  • Vegetable stock cube large 1

  • Water 2-cups

Directions

  • Put carrots, water, and Vegetable stock cube in a medium saucepan.
  • Heat this mixture on high heat for 2 minutes, When it starts boiling, reduce the heat and let it simmer on low heat for 20 minutes, until the carrots are almost tender.
  • Blend this mixture in a blender for 3 minutes, at 1-minute intervals, until the mixture thickens.
  • If needed, reheat it again.
  • Here’s your carrot chutney, ready!

Notes

  • Serve carrot chutney with naan, paratha, or rice.
  • Store in an airtight container in the fridge for up to 3-4 days.
